Grease trap design in Miami

Grease interceptor sizing, plumbing plans, and engineering coordination for restaurants and food-service properties.

Request an Engineering Proposal

Start with the design your operation needs

Genesis Fortune provides grease trap and grease interceptor engineering for restaurant owners, food-service operators, architects, and property teams. The design scope starts with the proposed operation, equipment layout, wastewater connections, existing conditions, and the reviewing authority’s requirements.

A new restaurant, change of use, kitchen expansion, or replacement of an existing device can create different engineering questions. We help establish what needs to be designed and what information must be verified before a device is selected or a construction proposal is prepared.

Sizing, plans, and coordination

Depending on the engagement, engineering deliverables can include grease interceptor sizing and calculations, a proposed device layout, grease-waste piping, plumbing connections, relevant details, and coordination with architectural and kitchen equipment plans. The proposal identifies which drawings, investigations, and review responses are included.

Sizing should address the actual equipment and operation rather than choosing a tank only by an assumed capacity. Location, routing, access, service conditions, and available space can affect the design and construction approach. Preliminary sizing is a starting point, not agency approval or a final installation instruction.

Miami-Dade FOG and DERM review

Miami-Dade County’s Fats, Oils and Grease program addresses food-service discharges and approved FOG control devices. For a project in Miami-Dade, we review the engineering scope in the context of the proposed use, available site information, and applicable agency comments.

A FOG operating permit is distinct from construction permitting. Existing notices, equipment changes, or ownership changes may affect which steps the operator needs to address. Send any notices or review comments with the inquiry so they can be considered in scope development. The relevant agency determines final requirements and approvals.

When an existing grease trap needs replacement

An existing device may raise questions about sizing, condition, location, access, or piping arrangement. Before a replacement is priced, the engineering scope can establish what records are available and whether field verification or additional investigation is needed.

For an operating restaurant, access and interruptions should be discussed early. Design and construction responsibilities should be clear, including who verifies underground conditions, secures permits, performs excavation, and coordinates inspections. These responsibilities are defined in the respective engineering and construction scopes.

Design with Genesis Fortune; build with Genesis Prime Group

Genesis Fortune leads the engineering work. Once the design and project requirements are defined, our sister company Genesis Prime Group can propose grease trap installation or replacement, including the appropriate excavation, piping, and construction coordination.

The construction engagement is a separate proposal. You can also use Genesis Fortune’s engineering services with your own contractor. This gives the project a clear path from the first design question to installation while keeping design scope, construction cost, and project responsibilities distinct.

What to send for a grease trap design proposal

Send the property address, type of operation, kitchen equipment plan, available plumbing drawings, existing device information, proposed work, and target timing. Include DERM notices or agency comments if applicable.

If records are incomplete, tell us what is available and whether a site visit can be arranged. We will identify the investigations and deliverables needed for an engineering proposal. Genesis Fortune serves Miami-Dade, Broward, and Monroe County projects, with requirements reviewed for the applicable jurisdiction.

Ready to discuss installation or replacement?

Genesis Prime Group is our sister company for construction. Share the engineering documents and scope to request a separate construction proposal.

Project questions

Do I need a design before requesting installation pricing?

An engineering review can clarify sizing, location, routing, and required approvals before construction pricing is finalized. The extent of design needed depends on the project.

Is the FOG operating permit the construction permit?

No. The operating permit and the construction permitting process serve different purposes. Review the applicable agency requirements for the proposed operation and construction work.

Can you design the system without doing the construction?

Yes. Genesis Fortune can provide engineering under a separate engagement, with construction performed by your contractor or proposed through Genesis Prime Group.
